Crockpot Love

TGIAF! I'm so ready for the weekend. I've been in a bit of a funk this week, and not sure why. And of course with 2 kids and a full-time job, who has time for that?!

Speaking of not enough time, I've been really loving the crockpot this week! I swear - it's mommy's best friend. Sometimes I forget about it for a while, but then when I use it, I get kind of obsessed with it. Who doesn't love a meal that cooks itself?

First up in the pot, was this delightful oatmeal that I prepped on Tuesday night. It is hands down my favorite at-home breakfast. The oatmeal comes out so creamy and fluffy! Recipe below...

Crockpot Banana Oatmeal
2 cups old fashioned oats
2 bananas, sliced
1/4 cup ground flaxseed
1/3 cup raisins
1/4 cup maple syrup
splash of vanilla
cinnamon to tasted
4 cups unsweetened vanilla almond milk, poured in last (highly recommend Silk - it results in the creamiest oats. Trust me. I've tried all the other brands!)

The first time I cooked these oats, I used the low setting overnight but it resulted in slightly overcooked oats. So now I use the keep warm setting and cook them for about 10 hours.

Today, I prepped some lentil taco "meat" in the Crockpot. Sooo good! I can't take credit for this recipe though. I used this recipe from Again, the recipe calls for 8 hours on high, but I have to use the low setting, or just cook it for less time. One very important thing - don't use red lentils! They will come out mushy! Brown lentils are perfect.
With all the time I saved on cooking dinner tonight (and with a little sweet talking to get my husband to put both kids to bed), I was able to set out for a run before the sun went down. It was a perfect running temperature - 60 degrees and breezy. I had a pretty enjoyable 5 mile run at a good pace (9:10). I did have one creepy dude run up beside me and try to talk to me...TWICE! First time that's happened to me around here. It just made me run faster!!
In other news... look what came in the mail today!!

Super pumped to start Focus T25 on Monday. The hubby is even going to get in on the action with me! A 25 minute workout will be perfect for this time-starved mommy!

Time to hit the hay, and get up and do it all over again!
