Fast Food Kind of Day

I hadn't planned on checking back in until tomorrow (another Making Fit Happen post comin' at ya!), but I actually managed to snap pictures of most of my eats today, so I thought I'd share. And don't let the title fool you... My kind of "fast food" most certainly doesn't come from the drive thru!

Today was all about quick and easy healthy eats. No time to be gourmet when someone's yelling for mommy every 10 seconds, and daddy's not around to help!

Breakfast: I started the day with a few of those Vegan Oatmeal Cookies that my big girl and I made last night. I wanted something fast since we had to rush out of the house to make it swim class - or so I thought. We got there at 8:50 only to discover that there were no classes this weekend. Ooops. I guess I should read more than the subject line in those emails they send out...

Lunch: After some grocery shopping that included a trip to Whole Paycheck, I mean Whole Foods, I whipped up this little meal in just a few minutes.

2 - 365 brand veggie dogs (new find today!)
ketchup & mustard
avocado
Engine 2 sprouted grain tortilla (plant strong!)


strawberries, blueberries, raspberries & kiwi - oh my!

There was some snacking in between - mostly some handfuls of Kashi Go Lean Vanilla Graham Clusters. (I am a serial cereal snacker...)

Dinner: Hmmm, what can I have that mostly cooks itself and allows me to make the kids some dinner at the same time? (Insert horribly blurry photo, taken while simultaneously calming a screaming 20-month-old.)

Super firm cubed tofu (lightly pan fried in some soy sauce)
Steam-in-bag California blend veggies
Top the whole sh'bang with some more low sodium soy sauce
I feel like the whole day went by in a flash! (Did I mention that I was awoken by a hungry toddler at 4:50 am? Yeah, I've been in a haze all day.) I may have fallen asleep in the rocking chair at 7:30 with my baby girl...

One more kid to put to bed, then it's off to bed myself! Stop by tomorrow for a recap of how I've been fitting in fitness while daddy's away. (You know you don't want to miss that!!)
